The type of stainless steel used is not disclosed, but I felt it had a decent hardness when sharpening it on a whetstone. There are some scratches on the blade’s surface, but there is minimal wear. ・What is the meaning of the characters engraved on the sides of the blades? There are several Japanese characters engraved on the right side of the blade. The two horizontally aligned characters at the top mean “registered.” Below that, the three vertically aligned characters read “Yasutsuna-Saku.” “Saku” means “work.” The horizontally aligned characters at the bottom mean “stainless steel.” ・What is Seki Masahiro? This company is one of the top manufacturers in Seki City, Gifu Prefecture, Japan’s leading producer of cutlery, in every aspect, including history, reliability, and track record.
